Ingredients (For 1 egg roll)
1. Egg – 1, beaten
Onion – 2 tsp, finely chopped
Cilantro – 1 tsp, chopped
Green chilly – 1/2 small, finely chopped
Pepper powder – 1 tiny pinch
Salt – To taste
2. Chapathi / paratha / tortilla – 1
3. Cucumber- 1/4 cup, peeled and cut into long strips
Onion – 2 tbsp, thinly sliced
Tomato ketchup – 1 – 2 tsp
Green chilly sauce – 1/2- 1 tsp
Lemon juice – 1/2 tsp
Chat masala – 1 pinch
Method
1. Beat an egg with the other ingredients numbered 1 (onion, cilantro and green chilly are optional).
2. Heat 1 tsp oil in a small pan at medium heat. Add the beaten egg and swirl it around so it spreads to the entire surface. When the egg is little done, place a chapathi on top and press gently. Cook for a minute until the egg is done. Sprinkle little oil on the chapathi and then flip it. Cook for a few seconds. Remove it to a plate with the egg side facing up. Top it with cucumber and onion slices followed by tomato ketchup, green chilly sauce, lemon juice and chat masala (optional). Wrap up the roll using an aluminium foil, paper towel or wax paper to hold it together. Yummy egg rolls are ready to enjoy!!
