Malai Tangdi Kabab – Restaurant Style

Malai Tangdi Kabab Recipe

Ingredients

  1. Chicken drumsticks – 6

Ginger-garlic paste – 1 tbsp

Lemon juice – 1 tbsp

Salt – As required

2. Yoghurt – 3 tbsp

Heavy cream – 2 tbsp

Ginger-garlic paste – 1 tbsp

Green chili paste – of 5 green chilies

Cumin powder – 3/4 tsp

Coriander powder – 1/2 tsp

Chat masala powder – 1/2 tsp (optional)

Garam masala powder – 1/2 – 3/4 tsp (optional)

Other optional ingredients – 1 pinch kasoori methi, 1 pinch cardamom powder, 2 – 3 tbsp shredded cheese)

Pepper powder – 1/2 tsp

Roasted besan – 1.5 tsp (Roast 1.5 tsp besan/kadala mavu in 1 – 2 tsp oil until a nutty aroma develops. Set aside to cool and use in the recipe. You can replace it with corn starch instead)

Coriander leaves, finely chopped – 2 tbsp

Ghee/ mustard oil/melted butter – 1 tbsp

Salt – As required

3. Melted butter/ghee – 1 – 2 tbsp, To baste

Method

  1. Marinate chicken pieces with the remaining ingredients numbered 1 for 30 minutes.

2. Add all ingredients numbered 2 to the chicken pieces. Mix well. Keep overnight in the refrigerator or for at least 2 hrs. Take it out 30 minutes before baking/grilling. For smoky flavor – Heat a charcoal over flame for a few seconds and place inside a small steel bowl. Place the bowl inside the bowl with marinated chicken and pour 2 tsp ghee over it. Immediately cover the bowl with lid. Remove charcoal bowl after 3 – 4 minutes.

3. Grill until chicken drumsticks are done or preheat oven to its maximum setting. The maximum temperature that I can set in my oven is 500 F so I baked them at that temperature. Line a cookie pan / baking tray with aluminum foil. Lightly grease the foil with oil. Arrange the chicken drumsticks on the foil. Bake it for about 15 minutes. Take out the tray carefully using your oven mitts. Turn them over and  brush/pour a little oil / melted butter on the chicken pieces. Return the tray to the oven. Bake for 8 – 10 minutes. Turn the oven to broil mode and broil for 2 – 3 minutes until chicken pieces are slightly charred. Be careful not to burn the chicken pieces. Brush the chicken drumsticks with melted butter. Enjoy immediately with naan and spicy green chutney.
