Lemon Chicken Pasta

Ingredients (Serves 2 – 3)

1. Pasta – 1/2 pound

2.  Mushroom – 250 gm, sliced

3. Chicken, boneless –  150 gm, cut into small pieces

Paprika – 1/4 tsp

Garlic powder – 1/4 tsp

Salt and pepper – As required

Italian seasoning – 1 pinch

Oil – 1 tsp

3. Olive oil – 1.5 tbsp

4. Onion – 1/4 cup, chopped

    Garlic – 2, minced

    Crushed chilly flakes – 1/4 tsp

5. Butter – 1 – 2 tsp

6. Parmesan cheese – 1/3 cup, grated

     Fresh parsley – 3 tbsp

Lemon juice – 2 tbsp or as needed to taste

7. Salt and pepper – To season

Method

  1. Combine chicken pieces with remaining ingredients numbered 3.

2. Cook pasta according to package instructions adding salt till al dente. Reserve 1/4 cup pasta cooking water.

3. Heat 1 tbsp olive oil in a pan at medium heat. Add chicken pieces and cook until completely done. Transfer to a bowl.

3. Add 2 – 3 tsp oil to the same pan and add onion, garlic and saute until onion turns transparent. Add mushroom slices, salt, pepper and cook for 3 – 4 mts. Add crushed chili flakes, butter and mix well.  Next add cooked pasta and 1/4 cup pasta cooking water. Mix well and cook for 1- 2 minutes. Add cooked chicken, grated parmesan cheese and chopped fresh parsley. Switch off. Toss well.  Finally add lemon juice, toss well and serve immediately. Sprinkle some more parmesan cheese while serving.
