Ingredients (Serves 2 – 3)
1. Fish fillet – 1 medium – sized or about 250 gm ( I used salmon)
2. Pepper powder – 1/4 – 1/2 tsp
Lemon juice – 2 tsp
Dried or fresh herbs – I used 1/4 tsp each of dried parsley, dill weed and basil
Minced garlic – 1/2 tsp
Garlic salt or regular salt – To taste
Olive oil – 2 tsp
Cut the fish into small cubes. Marinate with the ingredients numbered 2 for 30 mts.
3. Veggies – 1/2 a medium-sized bell pepper, diced
1 small firm tomato, diced
6 – 8 button mushrooms, halved
Big onion – 1/4 medium-sized, diced
4. Pepper powder – 1/4 tsp
Lemon juice – 2 tsp
Dried or fresh herbs – 1/4 tsp each of parsley, rosemary and thyme
Garlic salt or regular salt – To taste
Olive oil – 2 tsp
Combine the veggies with ingredients numbered 4. Set aside.
Method
1. Soak the bamboo skewers in water for at least 30 mts before using .
2. Preheat the oven to 350 F. Thread the fish pieces alternatively with the veggies on 5 skewers. Place them on a baking sheet lined with foil.
3. Bake for 15 – 20 mts until the fish is all done and juicy inside. It is not necessary to turn the skewers. Garnish with lemon wedges and serve immediately.

Soaking helps the threading process and it protects the skewers (esp their ends) from getting burnt / charred. Njan ethu kure pravshaym try cheythittundu but mostly salmon/tilapia vechu, pakshe ethu vare onnum podinjittilla ketto..Nalla firm fish fillet vechu try cheythu nokku..
