Bolognese pasta

Easy Pasta Bolognese Recipe

Ingredients (Serves 3 – 4)

1. Rigatoni / spaghetti /penne pasta – 3 cups

2. Olive oil – 1 – 2 tbsp

3 Ground beef – 1/2 lb

4. Garlic – 3, minced

    Onion – 1/2 cup, chopped

    Carrot – 1 medium-small, chopped

    Celery – 1/2 cup, chopped

5. Red wine – 1/2 cup

6. Crushed tomatoes – 1.5 cup

     Dried thyme and dried oregano –1 pinch each

7. Salt and pepper – To taste

8. Heavy cream / milk – 1/4 cup

9. Fresh green peas – 1/4 cup(optional)

     Basil leaves – A few,  torn (or 2 tbsp minced fresh Italian parsley)

10. Parmesan cheese – 3 – 4 tbsp, grated

Method

1. Heat olive oil in a pan at medium-high heat. Add ground beef and break it down using a spatula. Cook for 4 –5 minutes until it is no longer pink. Add garlic, onion, carrot and celery. Cook for  3 – 4 minutes. Add red wine and cook for a minute. Next add crushed tomatoes, dried thyme and oregano. Mix well. Season with salt and pepper. Cook for about 30 – 35 minutes at low heat. If the sauce becomes very thick, add 1/4 – 1/2 cup chicken stock / beef stock. Add 1/4 cup heavy cream and mix well. Cook for 6 – 8 minutes at low heat. Add fresh green peas and cook for 3 – 4 minutes.

2. Meanwhile cook pasta according to package instructions. Reserve 1/4 cup of pasta cooking liquid. Add cooked pasta to the  sauce and toss well until well-coated with the sauce. Add pasta cooking liquid if required. Switch off. Yummy pasta bolognese is ready to serve! Sprinkle parmesan cheese and serve immediately.
