Ingredients (Serves 3)
1. Fish fillet – 3 (I used tilapia)
Salt – As required
Pepper powder – 1/2 tsp
Chilly flakes – 1/2 – 3/4 tsp
Lemon juice – 1 – 2 tsp
Garlic, minced – 3 medium cloves
2. Bell pepper (red, green or yellow) – 1/2 cup, thinly sliced
3. Cheese, grated – 1/2 – 3/4 cup
4. Bread crumbs (regular plain or panko) – 3 – 4 tbsp
5. Butter – 3 – 4 tbsp
6. Onion – 1/2 cup, thickly sliced (Heat 1 tsp butter in a small pan. Add sliced onion, a pinch of salt and saute for a minute or two. Switch off.)
Method
1. Make small gashes on both sides of the fish fillet. Sprinkle enough salt, pepper powder, chilly flakes and lemon juice on both sides of the fish fillet. Rub it well. Set aside for 15 minutes. Line a baking sheet with aluminium foil or parchment paper. Grease it well. Top it with the fish fillet.
2. Top it with minced garlic, some bell pepper slices, shredded cheese followed by bread crumbs, butter and sauteed onion slices.
3. Preheat oven at 400 F. Bake for 15 – 20 minutes until done. Serve after a couple of minutes. We had it with toasted bread slices and steamed vegetables.
