Vegetable Chow Mein Recipe
Ingredients (Serves 3)
1. Chow mein noodles – 6 oz packet
2. Vegetable oil / peanut oil – 1 – 1.5 tbsp
3. Onion – 1/2 cup,sliced
Mushroom – 3/4 cup, sliced or quartered
Carrot – 1 medium-small, thinly sliced diagonally
4. Green and red bell pepper – 1/2 cup each
Celery – 1/4 – 1/2 cup, thinly sliced diagonally
Spring onion (white part) – 1/4 cup, cut into 1 inch pieces
5. Bean sprouts – 1/2 cup
6. Soy sauce – 1.5 tbsp
Oyster sauce – 1- 1.5 tbsp
Toasted sesame oil – 1 tsp
7. Salt and pepper – As required to taste
8. Spring onion (green part) – 1/4 cup, to garnish
Method
1. Fill a saucepan with water and bring to a boil. Add the noodles and cook for 3 – 4 minutes until done. Drain in a colander and rinse with cold water. Set aside to drain well.
2. Heat oil in a wok/ non stick pan at high heat. Add onion, mushroom and carrot. Stir-fry for a minute. Add bell pepper, celery and spring onion(white part). Add a pinch of salt and pepper. Mix well and stir-fry for 1 – 2 minutes. Add cooked noodles, bean sprouts and mix well. Finally add soy sauce, oyster sauce and toasted sesame oil. Stir-fry for 1 – 2 minutes until the noodles are well-coated with the sauces. Taste-check for salt and add more sauces, if required. Garnish with chopped spring onion. Serve as is or with any side-dishes.
