A flavorful and delicious Goan inspired shrimp dish that’s very easy to cook. Prep takes only 15 – 20 minutes, you cook everything in one pan (about 30 minutes total) and the cleanup is minimal. Hope you enjoy it as much as we did.
Ingredients (Serves 2 – 3)
1. Basmati rice – 1 cup (Rinse basmati rice well and soak in enough water for 30 minutes. Drain well)
2. Shrimp (medium sized) – 15 – 20, cleaned
3. Turmeric powder – 1 pinch
Chilly powder – 1/2 tsp
Salt – To taste
To grind
4. Cilantro / coriander leaves – 1/2 – 3/4 cup
Mint leaves – 1/4 cup
Grated coconut – 1 – 2 tbsp
Fennel seeds – 1/8 tsp
Ginger – 1/4 inch chopped
Garlic – 3 small
Green chilies – 2 – 3
Lemon juice – 1.5 tsp
Water – 1 – 2 tsp
5. Ghee / oil – 1 – 2 tbsp
6. Whole spices – cardamom – 2, cinnamon stick – 1/2 inch, cloves – 3 – 4
7. Onion – 1 cup, thinly sliced
8. Turmeric powder – 1/4 tsp
Coriander powder – 1/2 tsp
9. Tomato – 1 medium, chopped
10. Hot water / coconut milk – 1.5 cup
11. Lemon juice – 1/2 tsp
12. Salt – To taste
Method
1. Marinate the cleaned shrimp with turmeric powder, chilly powder, salt and 2 tbsp of the ground mixture. Set aside for 10 minutes.
2. Heat 1 – 2 tbsp ghee / oil in a pan or 4/5 liter pressure cooker over medium heat. Add the whole spices numbered 6 and stir until fragrant. Add sliced onion, little salt and saute until translucent. Add turmeric powder and 1/2 tsp coriander powder. Saute for a minute. Add chopped tomato and cook until soft. Add the ground green paste and cook for 1 – 2 minutes. Add soaked and drained rice and 1.5 cup hot water / coconut milk. Bring to a boil. Taste-check for salt. Add marinated prawns, 1/2 tsp lemon juice and stir gently. Cover and cook over medium-high heat for 4 minutes. Bring down the heat to low and cook for 5 – 6 minutes. Switch off. Open the lid after 10 minutes. (If you are using a pressure cooker, cook until steam comes profusely out of the lid. Place the weight on top and cook over low heat for 1 – 2 minutes. Switch off. Open after 8 – 10 minutes). Serve shrimp pulao with raita and pappad.
