Ingredients
1. All purpose flour – 2 cups
Baking powder – 1.5 tsp
Baking soda – 1/4 tsp
Salt – 1/2 tsp
2. Egg – 1
Vanilla extract – 1 tsp
Oil – 1/3 cup
Yoghurt – 3/4 cup
Milk – 1/4 cup
Sugar – 3/4 cup + 2 tbsp
For the streusel
3. Dark brown sugar – 1/4 cup
Granulated sugar – 2 tbsp
Cinnamon powder – 2 tsp
Salt – 1/8 tsp
Unsalted butter – 1/4 cup, melted
All purpose flour – 1/4 cup
Method
1. Preheat oven at 180 C / 350 F. Spray a 9x5x3 inch loaf pan with non-stick spray and line with parchment paper.
2. In a medium bowl, combine all the ingredients for the streusel using your fingers. Set aside.
3. Combine all the ingredients numbered 1 in a large bowl.
4. Whisk the ingredients numbered 2 in another large bowl. Stir in the dry ingredients numbered 1 into this wet mixture and stir until just combined.
5. Transfer the batter into the prepared pan. Top it with the streusel and bake for about 38 – 40 minutes until a toothpick inserted into the center comes out clean. Transfer to a wire rack after 10 minutes.
Hi Maya, I tried this cake replacing cinnamon powder with cocoa; and the bread turned out well. The texture was soft and it tasted delicious…
