Ingredients (Serves 1 – 2)
1. Cooked rice (Jasmine rice or kaima/ jeerakashala rice) – 1 – 1.5 cup, cooled (Add salt while cooking rice)
2. Oil – 1 tbsp
3. Egg – 1
4. Onion – 2 tbsp, finely chopped
Cabbage / Chinese greens – 1/2 cup, thinly sliced
Carrot – 2 tbsp, chopped
Spring onion (white part) – 2 tbsp
5. Butter – 1.5 tsp
6. Oyster sauce – 3/4 tsp
Chilly garlic sauce / chilly sauce – 3/4 tsp
Soy sauce – 1/2 tsp
Vinegar – 1/2 tsp (optional)
7. Salt and pepper – To taste
Method
Heat oil in a wok over high heat. Crack an egg into the wok and scramble it. When it is 75 % done, add the vegetables. Stir-fry for a minute. Add cooked rice followed by butter. Add the sauces and vinegar, if using. Stir-fry for a minute. Add spring onion, pepper powder, salt (if required) and stir-fry again. Switch off after a minute.
